This is super easy. I tripled this recipe
All you need is:
4 slices bacon, diced
1 plantain cut into bite sized pieces
1 apple diced
cinnamon (one shake from a shaker jar)I
If you don't like cinnamon, omit it
Brown the bacon
Add the plantains to the cooked bacon and toss around in the bacon fat. Cook about 5 minutes, until plantains start to soften.
Add the apples and turn to low and cook until the apples are cooked to your liking.
I made extra and tossed a squirt of lime juice over it so I could help preserve it for breakfast at work tomorrow.
You can put an egg over this, or next to it or eat it as is.
