Bacon Cheeseburger Casserole: Low-Carb, Keto-friendly


Here is a low-carb, keto-friendly meal your whole family will love.

Bacon Cheeseburger Casserole

i pack bacon (or two, you decide)
1 large onion, chopped
3 cloves garlic, chopped
3 lb ground beef (organic, pastured is best)
3/4 pack cream cheese
Salt and pepper

Cheese sauce
3 eggs
1 cup heavy cream
1 C shredded cheddar cheese
1 c shaved Parmesan cheese  (or 1/2 c grated)
4 tsp Dijon mustard


Topping
6 whole clausen pickles diced or sliced
1 c shredded cheddar cheese 
1 c shaved Parmesan cheese


Chop and fry bacon (or if you baked some already, chop it up and add to pan). Add onions, garlic and burger.  Fry until burger is no longer pink. Add cream cheese, salt and pepper.

Mix the cheese together and microwave until melted. Stir together the cream, mustard and eggs and add to cheese and mix well. (if the cheese it too hot, it will scramble the eggs so make sure its just melted and not steaming hot)

Put burger in casserole, pour cheese over top, add pickles and cheese sauce.

Bake at 350° for 20 ish minutes, until cheese on top is golden.

Serve it over a salad to make it California style
