Coconut Treats : No Bake Paleo , Primal , Grain-Free
Makes about 40 one-inch balls.
In a food processor combine:
1 cup almond flour
3 c shredded coconut (unsweetened), plus some for coating
3/4 cup maple syrup and honey (I mix both together in the measuring cup)
1/4 c milk (can use coconut milk)
Process until combined, scraping down the sides
Roll into balls and roll in shredded coconut
Refrigerate 30 minutes and they are done.
Store in the refrigerator until ready to eat.
