Spiralizer: Broccoli Stalk Alfredo Paleo and Whole30 Friendly



Do not throw those broccoli stalks away..they contain vitamins and minerals and taste delicious either raw in a salad or sauteed.  Its really quick to make.  I do this and put it in the refrigerator to take to work for lunch the next day.
I spiralized them three ways for you here and cooked them all together.  They all worked great for sauteeing so its only a matter of preference for the texture you like.

I cut off the broccoli stalk, and used a veggie peeler on it, just lightly to get off any knobs.
Then I spriralized it.
In a cast iron pan, I heated coconut oil (I am low on avocado oil but either will do).  Add chopped garlic, and saute for a moment and toss in the specialized broccoli stalk.
Remove from heat and squeeze some citrus juice over it..any will do, I used lime.
Sautee for a minute or two and add salt and pepper, and Parmesan cheese.
You can run with this and add chicken or salmon to this...whatever you like, whatever you have on hand.
